"Bacon Wrapped, Stuffed Chicken Breast"
Ingredients:
4- Snyder Family Farm Boneless Skinless Chicken Breast (this would be 2 of our packages)
8- slices of Snyder Family Farm Bacon (1 of the 1 lb packages should do)
1- tsp Salt
1- tsp Garlic Powder
1 tsp Italian Seasoning
*1- 8 oz. container Spinach Cheese Dip* (See note below recipe for which one we recommend)
Supplies:
Parchment paper
Baking sheet
Meat mallet (you can also use the side of a heavy can if you do not have one)
Wooden toothpicks
Directions:
Preheat oven to 400 degrees F, line a baking sheet pan with parchment paper. Mix the salt, garlic powder and Italian seasoning together in small bowl and set aside.
Remove chicken breasts form packaging and place one between 2 sheets of parchment paper (about 12 inches each).
Beat chicken with mallet until flattened out and uniform to about approx. 1/4 inch thick (a little thicker is fine).
Spoon in about a 1/4th of the spinach cheese dip container into middle of breast and spread out evenly with spoon.
Roll chicken breast while trying to keep sides tucked in somewhat. Sprinkle all sides exposed with the seasonings mixed prior.
Take 2 slices of bacon and wrap around breast (overlapping slightly as you go- idea is good coverage of bacon). Pierce toothpick through at bacon ends to hold in place while cooking. Place breast on baking sheet.
Repeat steps #2 thru #6 until all breasts are prepared.
Bake chicken for approx. 30 minutes or until internal temp of chicken is 165 degrees F. If you would like slightly crispier bacon you can broil for an additional 1-2 minutes, but watch carefully so as not to burn the bacon!
Remove and let rest for about 5 minutes before serving.

*We HIGHLY recommend the artisanal made Spinach Dip from Bundy Heirloom Farm. I cannot acclaim as to how the recipe would turn out with store bought dip but I do know you would probably need to add cheese to a dip from the store as Bundy's already has cheese in it.
